Arugula Elixir
The Green Vesper is a refreshing and intriguing cocktail featuring arugula-infused simple syrup, gin, vodka, and fresh lemon juice.
Ingredients
- 1/2 cup sugar
- 3 cups arugula
- 1 1/2 ounces gin
- 1/2 ounce vodka
- 3/4 ounce fresh lemon juice
- Pinch of salt
Instructions
- In a medium saucepan, bring sugar and 1/2 cup water to a boil over medium-high heat.
- Reduce the heat to medium-low and simmer the mixture, stirring constantly, until the sugar dissolves.
- Allow the simple syrup to cool slightly, then pour it into a heatproof vessel and chill for at least 35 minutes.
- Blend the arugula and simple syrup until liquefied.
- Strain the arugula mixture through a fine-mesh sieve or cheesecloth-lined colander into an airtight container and chill.
- In a cocktail shaker, combine gin, vodka, lemon juice, salt, and 1/2 oz. of the arugula simple syrup.
- Fill the shaker with ice and stir until the outside is frosty, approximately 30 seconds.
- Strain the mixture into a chilled Nick and Nora or coupe glass.
