Ingredients

  • 1/2 cup sugar
  • 3 cups arugula
  • 1 1/2 ounces gin
  • 1/2 ounce vodka
  • 3/4 ounce fresh lemon juice
  • Pinch of salt

Instructions

  1. In a medium saucepan, bring sugar and 1/2 cup water to a boil over medium-high heat.
  2. Reduce the heat to medium-low and simmer the mixture, stirring constantly, until the sugar dissolves.
  3. Allow the simple syrup to cool slightly, then pour it into a heatproof vessel and chill for at least 35 minutes.
  4. Blend the arugula and simple syrup until liquefied.
  5. Strain the arugula mixture through a fine-mesh sieve or cheesecloth-lined colander into an airtight container and chill.
  6. In a cocktail shaker, combine gin, vodka, lemon juice, salt, and 1/2 oz. of the arugula simple syrup.
  7. Fill the shaker with ice and stir until the outside is frosty, approximately 30 seconds.
  8. Strain the mixture into a chilled Nick and Nora or coupe glass.
