Ingredients
- 1/4 cup fresh or frozen blackberries
- 1 tablespoon sugar (or Monkfruit sweetener)
- 1/4 cup water
- 1/2 lime
- 1 mint leaf
- Club soda
- Ice
Instructions
- In a small saucepan, combine the blackberries, sugar, and water. Bring to a boil, then simmer for 10 minutes.
- Remove from heat and let the mixture cool to room temperature.
- Pour the blackberry syrup through a fine mesh strainer into a glass container.
- To make one drink, pour 3 tablespoons of the blackberry simple syrup into the bottom of a shaker.
- Add in the juice of 1/2 a lime and a mint leaf. Muddle the mixture together with a muddler or the handle of a wooden spoon.
- Add in a handful of ice to the shaker and shake the mix a few times.
- Fill a highball glass with ice and pour the contents of the shaker in.
- Top with club soda and enjoy!
