Ingredients

  • 1/4 cup fresh or frozen blackberries
  • 1 tablespoon sugar (or Monkfruit sweetener)
  • 1/4 cup water
  • 1/2 lime
  • 1 mint leaf
  • Club soda
  • Ice

Instructions

  1. In a small saucepan, combine the blackberries, sugar, and water. Bring to a boil, then simmer for 10 minutes.
  2. Remove from heat and let the mixture cool to room temperature.
  3. Pour the blackberry syrup through a fine mesh strainer into a glass container.
  4. To make one drink, pour 3 tablespoons of the blackberry simple syrup into the bottom of a shaker.
  5. Add in the juice of 1/2 a lime and a mint leaf. Muddle the mixture together with a muddler or the handle of a wooden spoon.
  6. Add in a handful of ice to the shaker and shake the mix a few times.
  7. Fill a highball glass with ice and pour the contents of the shaker in.
  8. Top with club soda and enjoy!
