Ingredients
- 1 1/2 tsp sugar or baking stevia
- 1/4 cup water
- Handful of mint leaves
- 1 1/2 oz white rum
- 1/2 cup canned light coconut milk
- Juice of 1/2 lime
- 1/2 cup ice
- Garnish: mint leaves, toasted coconut flakes (optional)
Instructions
- In a small saucepan, combine sugar, water, and mint leaves. Bring to a boil, then simmer for 10 minutes. Strain the mint and reserve the simple syrup.
- Let the simple syrup cool or place it in the freezer for 10-15 minutes to chill, but not freeze.
- When ready to serve, add the rum, coconut milk, lime juice, and reserved mint simple syrup to a high-powered blender.
- Add the ice and blend until smooth.
- Pour the frozen mojito into a cocktail glass.
- Garnish with mint leaves and toasted coconut flakes, if desired.
- Serve immediately.
