Ingredients

  • 1 1/2 tsp sugar or baking stevia
  • 1/4 cup water
  • Handful of mint leaves
  • 1 1/2 oz white rum
  • 1/2 cup canned light coconut milk
  • Juice of 1/2 lime
  • 1/2 cup ice
  • Garnish: mint leaves, toasted coconut flakes (optional)

Instructions

  1. In a small saucepan, combine sugar, water, and mint leaves. Bring to a boil, then simmer for 10 minutes. Strain the mint and reserve the simple syrup.
  2. Let the simple syrup cool or place it in the freezer for 10-15 minutes to chill, but not freeze.
  3. When ready to serve, add the rum, coconut milk, lime juice, and reserved mint simple syrup to a high-powered blender.
  4. Add the ice and blend until smooth.
  5. Pour the frozen mojito into a cocktail glass.
  6. Garnish with mint leaves and toasted coconut flakes, if desired.
  7. Serve immediately.
