Cozy Rum and Nutmeg Eggnog

- 2 oz heavy cream
- 1 large egg yolk
- 1 tbsp sugar
- 3/4 cup whole milk
- a pinch of salt
- 1/2 oz dark rum
- a dash of ground nutmeg
Instructions
- In a medium bowl, whisk together 2 oz heavy cream, egg yolk, and sugar until smooth and pale in color.
- In a saucepan, heat 3/4 cup whole milk and a pinch of salt until it simmers.
- Slowly pour the hot milk into the egg mixture while whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook over medium-low heat until it reaches 160 degrees, stirring constantly.
- Once cooked, pour the eggnog into a clean bowl and stir in the dark rum and ground nutmeg.
- Place the bowl of eggnog in a larger bowl filled with ice and refrigerate until chilled, stirring occasionally.
- Just before serving, whip 2 oz heavy cream until soft peaks form, then gently fold it into the chilled eggnog.
