Ingredients

  • 2 oz heavy cream
  • 1 large egg yolk
  • 1 tbsp sugar
  • 3/4 cup whole milk
  • a pinch of salt
  • 1/2 oz dark rum
  • a dash of ground nutmeg

Instructions

  1. In a medium bowl, whisk together 2 oz heavy cream, egg yolk, and sugar until smooth and pale in color.
  2. In a saucepan, heat 3/4 cup whole milk and a pinch of salt until it simmers.
  3. Slowly pour the hot milk into the egg mixture while whisking continuously to temper the eggs.
  4. Return the mixture to the saucepan and cook over medium-low heat until it reaches 160 degrees, stirring constantly.
  5. Once cooked, pour the eggnog into a clean bowl and stir in the dark rum and ground nutmeg.
  6. Place the bowl of eggnog in a larger bowl filled with ice and refrigerate until chilled, stirring occasionally.
  7. Just before serving, whip 2 oz heavy cream until soft peaks form, then gently fold it into the chilled eggnog.
  8. Serve the eggnog garnished with a sprinkle of nutmeg.
