Ingredients

  • 2 cups whole milk
  • 2 tablespoons sugar
  • 1/2 vanilla pod or 1 teaspoon vanilla extract
  • 1/2 cinnamon stick
  • 3 cloves
  • Pinch of freshly grated nutmeg
  • 3 egg yolks
  • 1/4 cup brandy

Instructions

  1. In a saucepan, combine the milk, sugar, vanilla pod, cinnamon, cloves, and nutmeg. Heat on medium until it's almost boiling, then simmer for 20 minutes.
  2. In a bowl, beat the egg yolks until pale and frothy.
  3. Slowly pour the milk mixture into the egg yolks while whisking continuously.
  4. Return the mixture to the saucepan and simmer on medium heat, stirring constantly, until thickened.
  5. Remove from heat, cool for 5 minutes, then stir in the brandy and vanilla extract (if using).
  6. Transfer the mixture to sterilized bottles or jars and let it cool completely before storing in the fridge for at least a week to develop flavors.
  7. Serve cold or warm with a sprinkle of cinnamon and icing sugar, if desired.
