Ingredients
- 2 cups whole milk
- 2 tablespoons sugar
- 1/2 vanilla pod or 1 teaspoon vanilla extract
- 1/2 cinnamon stick
- 3 cloves
- Pinch of freshly grated nutmeg
- 3 egg yolks
- 1/4 cup brandy
Instructions
- In a saucepan, combine the milk, sugar, vanilla pod, cinnamon, cloves, and nutmeg. Heat on medium until it's almost boiling, then simmer for 20 minutes.
- In a bowl, beat the egg yolks until pale and frothy.
- Slowly pour the milk mixture into the egg yolks while whisking continuously.
- Return the mixture to the saucepan and simmer on medium heat, stirring constantly, until thickened.
- Remove from heat, cool for 5 minutes, then stir in the brandy and vanilla extract (if using).
- Transfer the mixture to sterilized bottles or jars and let it cool completely before storing in the fridge for at least a week to develop flavors.
