Ingredients

  • 1/2 cup unsalted raw cashews
  • 1/2 cup maple syrup
  • 1 1/4 cups cold water
  • 1/2 cup Irish whiskey
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, soak the cashews in boiling water for 15 minutes, then drain and discard the water.
  2. In a blender, blend the soaked cashews, maple syrup, and cold water until smooth.
  3. In a pot, heat the cashew mixture, bringing to a boil and simmering for 1 minute.
  4. Remove from heat and let cool for 15 minutes, stirring occasionally.
  5. Add the whiskey and vanilla, mix well.
  6. Strain the mixture through a fine sieve or mesh strainer into an airtight jar.
  7. Refrigerate until chilled and mix well before serving over ice or in coffee.
