Ingredients

  • 2 thyme sprigs, leaves only
  • 2 rosemary sprigs, leaves only
  • 8 edible flowers (such as pansies, rose petals, and borage)
  • 1.70 oz elderflower cordial
  • 5 oz elderflower liqueur
  • 5 oz gin
  • ice
  • 11.20 oz can sparkling water

Instructions

  1. Place the herbs and flowers into the holes of an ice cube tray, fill with water, and freeze for 2-3 hours or until frozen solid.
  2. In a large jug, combine the elderflower cordial, elderflower liqueur, gin, and a large handful of ice cubes. Stir until the outside of the jug feels cold.
  3. Strain the mixture into a tall glass or champagne flute.
  4. Top with sparkling water and add a few more ice cubes and the floral ones too.
  5. Serve immediately and enjoy the refreshing flavors.
