A refreshing and zingy twist on the classic Mojito, this Elderflower Mint Mojito is made with St Germain elderflower liquor, fresh mint, lime, and Havana Club rum.

Ingredients

  • 10-12 fresh mint leaves
  • 1 oz simple syrup (or 1 or 2 teaspoons of caster sugar)
  • Ice cubes
  • 2 oz St Germain elderflower liquor
  • 2 oz Havana Club rum
  • Juice of half a lime
  • 1 lime (cut in quarters)
  • Club soda

Instructions

  1. Place the fresh mint leaves into a tall glass and add the simple syrup. Use a muddler to gently crush the mint leaves to release their oils.
  2. Add ice cubes to the glass, and then squeeze in the juice of half a lime. Pour in the St Germain elderflower liquor and rum.
  3. Drop the lime quarters into the glass and top up with club soda.
  4. Stir the cocktail gently and serve.
