Ingredients
- 1 egg yolk
- 2 tablespoons sugar
- 1/2 cup whole milk
- 3/8 cup heavy cream
- 1/4 teaspoon fresh ground nutmeg
- 1/8 teaspoon ground cinnamon
- 1/4 teaspoon vanilla
Instructions
- Whisk the egg yolk until light in color in a large bowl. Add the sugar and continue whisking until smooth and fluffy.
- Heat the milk and cream in a medium saucepan on medium heat until it just begins to steam.
- Slowly whisk the hot milk into the egg yolks until frothy, then stir in the cinnamon and nutmeg.
- Return the mixture to the pot and heat on medium until it simmers and thickens, ensuring it doesn't boil. It should coat the back of a wooden spoon.
- Remove from heat and stir in the vanilla.
- Place a strainer over the bowl and carefully pour the mixture through the strainer.
- Cover and refrigerate until chilled.
- Garnish with fresh nutmeg, cinnamon, or candy canes.
