Ingredients

  • 1 cup whole milk
  • 1/2 cinnamon stick
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon pure vanilla extract
  • 3 large egg yolks
  • 1/4 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/8 teaspoon ground cinnamon for topping (optional)

Instructions

  1. In a medium saucepan over low heat, whisk together the milk, nutmeg, and vanilla.
  2. Add the cinnamon stick to the mixture and allow it to infuse.
  3. Bring the mixture to a low boil for 3-4 minutes.
  4. In a bowl, whisk the egg yolks and sugar until the yolks become pale in color.
  5. Gradually add a spoonful of the hot milk mixture to the egg yolks and sugar, mixing well.
  6. Slowly pour in the remaining hot milk, whisking constantly.
  7. Pour the mixture back into the saucepan and cook over medium heat until it thickens and coats the back of a spoon.
  8. Remove from heat and stir in the heavy cream.
  9. Chill until ready to serve.
  10. Serve with a sprinkle of cinnamon, a cinnamon stick, or whipped cream.
