Ingredients
- 1 cup whole milk
- 1/2 cinnamon stick
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon pure vanilla extract
- 3 large egg yolks
- 1/4 cup granulated sugar
- 1/2 cup heavy cream
- 1/8 teaspoon ground cinnamon for topping (optional)
Instructions
- In a medium saucepan over low heat, whisk together the milk, nutmeg, and vanilla.
- Add the cinnamon stick to the mixture and allow it to infuse.
- Bring the mixture to a low boil for 3-4 minutes.
- In a bowl, whisk the egg yolks and sugar until the yolks become pale in color.
- Gradually add a spoonful of the hot milk mixture to the egg yolks and sugar, mixing well.
- Slowly pour in the remaining hot milk, whisking constantly.
- Pour the mixture back into the saucepan and cook over medium heat until it thickens and coats the back of a spoon.
- Remove from heat and stir in the heavy cream.
- Chill until ready to serve.
- Serve with a sprinkle of cinnamon, a cinnamon stick, or whipped cream.
