Ingredients

  • 1 large very fresh farm egg
  • 2 tablespoons sugar
  • 6 tablespoons whole milk
  • 2 tablespoons heavy whipping cream
  • Garnish: fresh grated nutmeg

Instructions

  1. Carefully separate the egg yolk from the white and refrigerate the egg white.
  2. In a medium bowl, whisk together the egg yolk and sugar until smooth.
  3. Slowly whisk in the milk and cream, and set aside.
  4. In another medium bowl, whisk the egg white until it becomes frothy.
  5. Stir two-thirds of the frothy egg white mixture into the yolk mixture and discard the remaining one-third.
  6. Garnish with fresh grated nutmeg.
  7. Store sealed in a glass jar in the refrigerator for up to 1 day. Shake the jar before mixing cocktails.
