Ingredients

  • 3/4 cup heavy whipping cream
  • 1/4 cup unsweetened almond milk
  • 2-3 tbsp allulose (to taste)
  • 1/2 tbsp cocoa powder
  • 1/2 tsp instant coffee
  • 2 oz Irish whiskey
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract (or more vanilla extract)

Instructions

  1. In a saucepan over medium heat, combine the heavy cream, almond milk, allulose, cocoa powder, and instant coffee.
  2. Bring to a simmer and let it reduce by about 25%, for approximately 15 minutes, without boiling.
  3. Turn off the heat and stir in the whiskey and extracts.
  4. Taste and adjust the sweetness if needed.
  5. Allow the mixture to cool completely, then transfer to a glass bottle and chill before serving.
  6. Store in the refrigerator and consume within 2 weeks.
