Ingredients

  • 2 tbsp sugar
  • 1/4 cup water
  • small handful of fresh lavender flowers (3-4 heads)
  • 2 sprigs fresh thyme
  • 1/4 cup frozen blueberries
  • 1/2 oz lavender-thyme simple syrup
  • juice of 1/2 lemon
  • 1/2 tsp vanilla extract
  • soda water, for topping

Instructions

  1. In a small saucepan, combine sugar and water and bring to a boil.
  2. Add lavender and thyme, then reduce heat and simmer for 10 minutes.
  3. Remove from heat and let it infuse for 1 hour.
  4. In a cocktail shaker filled with ice, combine frozen blueberries, simple syrup, lemon juice, and vanilla extract. Shake for 1 minute.
  5. Strain the mixture into a glass filled with ice.
  6. Top with soda water.
