Limoncello Sparkling Jelly

Ingredients
- 1/2 oz. gelatin leaves
- 1 1/2 cups Prosecco
- 1 tsp caster sugar
- 3 tbsp limoncello
- Edible gold glitter, for sprinkling
Instructions
- Place the gelatin leaves in a bowl of cold water for 5 minutes or until soft, then squeeze the leaves and discard the water.
- In a bowl over a pan of boiling water, combine the limoncello, gelatin, and sugar, heating gently until dissolved. Remove from heat.
- Add the Prosecco to the mixture and pour into a jug.
- Slowly and carefully pour the jelly mixture into glasses until almost full, then refrigerate until set.
- Top with edible gold glitter before serving.
