Ingredients

  • 1 egg yolk
  • 1 1/2 tablespoons monk fruit sweetener
  • 3 tablespoons almond milk
  • 3 tablespoons heavy cream
  • 2 tablespoons dark rum
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon cinnamon
  • Pinch of ground nutmeg

Instructions

  1. Beat the egg yolk until it becomes golden in color.
  2. Add the monk fruit sweetener and vanilla extract, and mix thoroughly.
  3. In a saucepan, heat the almond milk and heavy cream until gently boiling.
  4. Slowly add the mixture of milk and cream to the egg mixture while whisking continuously.
  5. Add the cinnamon to the mixture.
  6. Return the mixture to the saucepan over medium heat, and whisk until the liquid starts to gently thicken.
  7. Remove from the heat and stir in the dark rum.
  8. Pour the mixture into a serving glass or cup and sprinkle the nutmeg on top.
  9. Serve warm or allow to cool and serve over ice.
