Ingredients
- 1 egg yolk
- 1 1/2 tablespoons monk fruit sweetener
- 3 tablespoons almond milk
- 3 tablespoons heavy cream
- 2 tablespoons dark rum
- 1 teaspoon vanilla extract
- 1/8 teaspoon cinnamon
- Pinch of ground nutmeg
Instructions
- Beat the egg yolk until it becomes golden in color.
- Add the monk fruit sweetener and vanilla extract, and mix thoroughly.
- In a saucepan, heat the almond milk and heavy cream until gently boiling.
- Slowly add the mixture of milk and cream to the egg mixture while whisking continuously.
- Add the cinnamon to the mixture.
- Return the mixture to the saucepan over medium heat, and whisk until the liquid starts to gently thicken.
- Remove from the heat and stir in the dark rum.
- Pour the mixture into a serving glass or cup and sprinkle the nutmeg on top.
- Serve warm or allow to cool and serve over ice.
