Ingredients
- 1 1/2 oz gin
- 1 oz Dolin dry vermouth
- 2 1/2 oz cantaloupe cordial
- 2 dashes Peychaud's bitters
- 1 dash saline solution
- Mozzarella foam*
- Garnish: ground black pepper
- *Mozzarella foam: 7 oz stracciatella di bufala, 6.50 oz milk, 1/2 tsp saline solution, 1 tsp white balsamic vinegar, 1 tsp simple syrup
Instructions
- In a large shaker tin with ice, combine the gin, dry vermouth, cantaloupe cordial, bitters, and saline solution. Shake well to aerate and dilute.
- Strain the mixture into a double rocks glass over fresh ice.
- Dispense mozzarella foam from an iSi whipper to top the cocktail.
- Garnish with ground black pepper.
