Ingredients

  • 1 1/2 oz gin
  • 1 oz Dolin dry vermouth
  • 2 1/2 oz cantaloupe cordial
  • 2 dashes Peychaud's bitters
  • 1 dash saline solution
  • Mozzarella foam*
  • Garnish: ground black pepper
  • *Mozzarella foam: 7 oz stracciatella di bufala, 6.50 oz milk, 1/2 tsp saline solution, 1 tsp white balsamic vinegar, 1 tsp simple syrup

Instructions

  1. In a large shaker tin with ice, combine the gin, dry vermouth, cantaloupe cordial, bitters, and saline solution. Shake well to aerate and dilute.
  2. Strain the mixture into a double rocks glass over fresh ice.
  3. Dispense mozzarella foam from an iSi whipper to top the cocktail.
  4. Garnish with ground black pepper.
