Ingredients

  • 2 oz dry gin
  • 3/4 oz fresh lime juice
  • 1/2 oz simple syrup
  • 1/2 oz orange liqueur (Pierre Ferrand Dry Curaçao, Cointreau, or triple sec)
  • 1 egg white
  • Ice
  • Chilled soda water

Instructions

  1. Combine the gin, lime juice, simple syrup, orange liqueur, and egg white in a shaker.
  2. Cover and shake vigorously for 10 seconds to foam the egg white.
  3. Add ice to the shaker, cover again, and shake vigorously until chilled and well-frothed, about 10 to 15 seconds more.
  4. Double-strain the mixture into a small Collins or fizz glass without ice.
  5. Top with chilled soda water.
