Ingredients

  • 1/4 cup water
  • 1 tablespoon sugar
  • 1 tablespoon fresh rosemary leaves
  • 1/3 cup diced fresh rhubarb
  • 1 1/2 tablespoons fresh lemon juice
  • 3 tablespoons white rum
  • Ice
  • Fresh rosemary sprig for garnish

Instructions

  1. In a small saucepan, simmer 1/4 cup water and 1 tablespoon sugar over medium heat until the sugar dissolves.
  2. Remove from heat and add fresh rosemary leaves. Let it steep for 5 minutes, then strain the syrup through a fine-mesh sieve. Discard the rosemary and allow the syrup to cool.
  3. In a blender, combine the diced rhubarb, 1 tablespoon lemon juice, 1/3 cup water, and 1 tablespoon sugar. Blend into a coarse puree, then strain the mixture through a fine-mesh strainer into a bowl, squeezing the pulp to extract as much liquid as possible. Discard the pulp.
  4. Refrigerate the rhubarb juice and rosemary syrup separately for at least 4 hours or up to 2 days.
  5. When ready to serve, mix the rhubarb juice, rosemary syrup, remaining lemon juice, and rum in a pitcher. Stir to combine.
  6. Serve the cocktail in glasses filled with ice, or for a martini-style, pour into an ice-filled cocktail shaker and stir until very cold. Garnish with a fresh rosemary sprig.
