Ingredients
- 1 Black tea bag
- 1 Green cardamom pod
- 3 thin slices of ginger (1 mm thick)
- 1/2 Cinnamon stick (about 4 inches long)
- 1-2 Cloves
- 1/4 tsp Black peppercorns
- 1/4 Star anise
- 1/8 tsp Fennel seeds
- A pinch of freshly grated nutmeg
- 1/2 Vanilla pod
- 1/2 cup Water
- 1-1.50 tbsp Light brown sugar
- 1/2 cup Whole milk
- 1 tbsp Dark rum
Instructions
- Bruise the ginger using a cocktail muddler and place it in a saucepan with the vanilla pod, whole spices, and tea bag.
- Pour in the water and cook over moderate heat for 10 minutes.
- Add the milk and 2 tbsp of sugar, then bring the mixture to a boil and simmer gently for 20 minutes.
- Stir and taste the mixture, adding more sugar if needed.
- Strain the tea through a fine-meshed sieve or a nut bag.
- Serve as is or with 1 tbsp of rum per serving, and garnish with cinnamon and/or star anise.
