Ingredients

  • 1 Black tea bag
  • 1 Green cardamom pod
  • 3 thin slices of ginger (1 mm thick)
  • 1/2 Cinnamon stick (about 4 inches long)
  • 1-2 Cloves
  • 1/4 tsp Black peppercorns
  • 1/4 Star anise
  • 1/8 tsp Fennel seeds
  • A pinch of freshly grated nutmeg
  • 1/2 Vanilla pod
  • 1/2 cup Water
  • 1-1.50 tbsp Light brown sugar
  • 1/2 cup Whole milk
  • 1 tbsp Dark rum

Instructions

  1. Bruise the ginger using a cocktail muddler and place it in a saucepan with the vanilla pod, whole spices, and tea bag.
  2. Pour in the water and cook over moderate heat for 10 minutes.
  3. Add the milk and 2 tbsp of sugar, then bring the mixture to a boil and simmer gently for 20 minutes.
  4. Stir and taste the mixture, adding more sugar if needed.
  5. Strain the tea through a fine-meshed sieve or a nut bag.
  6. Serve as is or with 1 tbsp of rum per serving, and garnish with cinnamon and/or star anise.
