Ingredients
- 2 tablespoons long grain white rice
- 1 cup water
- 1 cinnamon stick
- 2 tablespoons pumpkin puree
- 1/4 cup coconut cream
- 1 tablespoon brown sugar
- 1/4 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1 oz rum
Instructions
- In a blender, combine the long grain white rice and water. Blend until the rice is finely ground.
- Add the cinnamon stick to the blender and blend again. Refrigerate the mixture for 24 hours.
- Remove the cinnamon stick and strain the rice through a cheesecloth into a pitcher.
- In a saucepan, combine the pumpkin puree, coconut cream, brown sugar, pumpkin pie spice, and vanilla. Heat on low, stirring constantly until smooth.
- Once lukewarm, add the pumpkin sauce to the rice milk and stir well.
- Optionally, strain the mixture through a cheesecloth for a finer texture.
- Add the rum and stir.
- Serve and garnish with a cinnamon stick.
