Ingredients
- 6 mint leaves, plus extra sprigs for garnish
- 1/2 lime, cut into wedges
- 2 teaspoons simple syrup (or 2 teaspoons sugar dissolved in 2 teaspoons water)
- 3 raspberries
- 1 oz white rum
- 1 tablespoon cherry brandy (or Chambord)
- Tonic water to top up (or use soda water)
Instructions
- In a highball glass, muddle the mint leaves, lime wedges, raspberries, and simple syrup to extract the juice and flavors.
- Add plenty of crushed ice to the glass.
- Pour the white rum and cherry brandy over the ice, then stir well.
- Top up with tonic water or soda water.
- Decorate with a sprig of mint and serve.
