Ingredients

  • 6 mint leaves, plus extra sprigs for garnish
  • 1/2 lime, cut into wedges
  • 2 teaspoons simple syrup (or 2 teaspoons sugar dissolved in 2 teaspoons water)
  • 3 raspberries
  • 1 oz white rum
  • 1 tablespoon cherry brandy (or Chambord)
  • Tonic water to top up (or use soda water)

Instructions

  1. In a highball glass, muddle the mint leaves, lime wedges, raspberries, and simple syrup to extract the juice and flavors.
  2. Add plenty of crushed ice to the glass.
  3. Pour the white rum and cherry brandy over the ice, then stir well.
  4. Top up with tonic water or soda water.
  5. Decorate with a sprig of mint and serve.
