Ingredients
- 3 oz Cava
- 1 1/2 oz Vodka
- 2 oz Lemon Sorbet
- 2 oz Apple Juice
- 1/8 tsp Lecithin Powder
Instructions
- Place the glass in the freezer for at least 30 minutes before serving.
- In a bowl, mix the apple juice and Lecithin using a hand blender to create a layer of foam. Ensure the hand blender is positioned to incorporate air into the mixture.
- In a separate mixing bowl, blend the Cava, vodka, and lemon sorbet using a hand blender until well combined.
- If needed, insert a long spoon into the glass and scoop the Sgroppino to approximately 1cm below the rim.
- Gently spoon a dollop of the apple juice foam onto the Sgroppino in the glass, creating a nice, high point of foam.
