Ingredients

  • 3 oz Cava
  • 1 1/2 oz Vodka
  • 2 oz Lemon Sorbet
  • 2 oz Apple Juice
  • 1/8 tsp Lecithin Powder

Instructions

  1. Place the glass in the freezer for at least 30 minutes before serving.
  2. In a bowl, mix the apple juice and Lecithin using a hand blender to create a layer of foam. Ensure the hand blender is positioned to incorporate air into the mixture.
  3. In a separate mixing bowl, blend the Cava, vodka, and lemon sorbet using a hand blender until well combined.
  4. If needed, insert a long spoon into the glass and scoop the Sgroppino to approximately 1cm below the rim.
  5. Gently spoon a dollop of the apple juice foam onto the Sgroppino in the glass, creating a nice, high point of foam.
