Ingredients
- 2 tbsp sugar
- 1/4 cup water
- small handful fresh lavender flowers (3-4 heads)
- 2 sprigs fresh thyme
- 1/4 cup frozen blueberries
- 1/2 oz lavender-thyme simple syrup
- juice of 1/2 lemon
- 1/2 tsp vanilla bean paste
- lemon soda water to top
Instructions
- In a small saucepan, combine sugar and water. Heat and stir until the sugar dissolves, then bring to a boil.
- Add lavender and thyme, reduce the heat, and simmer for 10 minutes. Remove from heat and let it infuse for 1 hour.
- In a cocktail shaker filled with ice, combine frozen blueberries, simple syrup, lemon juice, and vanilla bean paste. Shake for 1 minute.
- Strain the mixture into an ice-filled glass and top with lemon soda water.
