Ingredients

  • 2 tbsp sugar
  • 1/4 cup water
  • small handful fresh lavender flowers (3-4 heads)
  • 2 sprigs fresh thyme
  • 1/4 cup frozen blueberries
  • 1/2 oz lavender-thyme simple syrup
  • juice of 1/2 lemon
  • 1/2 tsp vanilla bean paste
  • lemon soda water to top

Instructions

  1. In a small saucepan, combine sugar and water. Heat and stir until the sugar dissolves, then bring to a boil.
  2. Add lavender and thyme, reduce the heat, and simmer for 10 minutes. Remove from heat and let it infuse for 1 hour.
  3. In a cocktail shaker filled with ice, combine frozen blueberries, simple syrup, lemon juice, and vanilla bean paste. Shake for 1 minute.
  4. Strain the mixture into an ice-filled glass and top with lemon soda water.
