Ingredients

  • 1/8 cup powdered monkfruit sweetener
  • 1/4 cup water
  • 1 cup frozen pineapple chunks
  • 4 oz pineapple juice
  • 3 tbsp coconut cream
  • 2 oz light rum
  • 3-4 ice cubes
  • Garnish (Fresh pineapple slices)

Instructions

  1. In a small skillet, combine the powdered monkfruit sweetener and water. Heat and stir until the sweetener completely dissolves, around 3-4 minutes. Set aside to cool.
  2. Place the frozen pineapple, pineapple juice, coconut cream, rum, and 1/4 cup of prepared simple syrup into a blender. Blend until smooth.
  3. While blending, add the ice a little at a time until reaching the desired consistency.
  4. Taste and add more simple syrup if desired, then blend for another 30 seconds.
  5. Pour into a glass and serve immediately, garnished with fresh pineapple slices.
