Ingredients
- 1/8 cup powdered monkfruit sweetener
- 1/4 cup water
- 1 cup frozen pineapple chunks
- 4 oz pineapple juice
- 3 tbsp coconut cream
- 2 oz light rum
- 3-4 ice cubes
- Garnish (Fresh pineapple slices)
Instructions
- In a small skillet, combine the powdered monkfruit sweetener and water. Heat and stir until the sweetener completely dissolves, around 3-4 minutes. Set aside to cool.
- Place the frozen pineapple, pineapple juice, coconut cream, rum, and 1/4 cup of prepared simple syrup into a blender. Blend until smooth.
- While blending, add the ice a little at a time until reaching the desired consistency.
- Taste and add more simple syrup if desired, then blend for another 30 seconds.
- Pour into a glass and serve immediately, garnished with fresh pineapple slices.
