Ingredients

  • 2 oz light rum
  • 1 1/2 oz cream of coconut (such as Coco López)
  • 1 oz pineapple juice
  • 1/2 oz lime juice (freshly squeezed)
  • 1 cup frozen pineapple chunks
  • 1 cup ice
  • Garnish: pineapple wedge
  • Garnish: Maraschino cherry
  • Garnish: Miniature umbrella (optional)

Instructions

  1. Freeze pineapple chunks for at least an hour in advance.
  2. When ready to serve, blend all ingredients except garnishes in a blender. Remember to shake the cream of coconut before adding.
  3. Blend until smooth, approximately 20-30 seconds.
  4. Pour the mixture into a hurricane glass.
  5. Garnish with a pineapple wedge, maraschino cherry, and a pineapple leaf (and/or miniature umbrella).
