Ingredients
- 2 oz light rum
- 1 1/2 oz cream of coconut (such as Coco López)
- 1 oz pineapple juice
- 1/2 oz lime juice (freshly squeezed)
- 1 cup frozen pineapple chunks
- 1 cup ice
- Garnish: pineapple wedge
- Garnish: Maraschino cherry
- Garnish: Miniature umbrella (optional)
Instructions
- Freeze pineapple chunks for at least an hour in advance.
- When ready to serve, blend all ingredients except garnishes in a blender. Remember to shake the cream of coconut before adding.
- Blend until smooth, approximately 20-30 seconds.
- Pour the mixture into a hurricane glass.
- Garnish with a pineapple wedge, maraschino cherry, and a pineapple leaf (and/or miniature umbrella).
