Ingredients

  • 1/2 tablespoon sugar, for rimming champagne flute
  • 1 pineapple wedge
  • 1/6 cup pineapple juice
  • 1 tablespoon coconut milk
  • 2 oz champagne
  • Whipped topping and fresh pineapple wedge, for garnish

Instructions

  1. Sprinkle sugar onto a shallow dish. Rim a champagne flute with a pineapple wedge and dip it in sugar. Set aside.
  2. In a tall glass, stir together pineapple juice and coconut milk until well combined.
  3. Pour the pineapple juice and coconut milk mixture into the prepared champagne flute.
