Ingredients
- 2 ounces light rum
- 1 1/2 ounces cream of coconut (such as Coco López)
- 1 ounce pineapple juice
- 1/2 ounce freshly squeezed lime juice
- 1 cup frozen pineapple chunks
- 1 cup ice
- Garnish: pineapple wedge
- Garnish: Maraschino cherry
- Garnish: Miniature umbrella (optional)
Instructions
- Place frozen pineapple chunks in a container in the freezer for at least one hour.
- When ready to serve, blend all ingredients except garnishes in a blender, ensuring the cream of coconut is well shaken before adding. Puree until smooth, about 20-30 seconds.
- Pour the mixture into a hurricane glass.
- Garnish with a pineapple wedge, Maraschino cherry, and a pineapple leaf (and/or miniature umbrella).
