Ingredients

  • 2 ounces light rum
  • 1 1/2 ounces cream of coconut (such as Coco López)
  • 1 ounce pineapple juice
  • 1/2 ounce freshly squeezed lime juice
  • 1 cup frozen pineapple chunks
  • 1 cup ice
  • Garnish: pineapple wedge
  • Garnish: Maraschino cherry
  • Garnish: Miniature umbrella (optional)

Instructions

  1. Place frozen pineapple chunks in a container in the freezer for at least one hour.
  2. When ready to serve, blend all ingredients except garnishes in a blender, ensuring the cream of coconut is well shaken before adding. Puree until smooth, about 20-30 seconds.
  3. Pour the mixture into a hurricane glass.
  4. Garnish with a pineapple wedge, Maraschino cherry, and a pineapple leaf (and/or miniature umbrella).
