Ingredients

  • 1 1/3 tbsp blanched almonds
  • 3 1/3 tbsp plus 2 tsp granulated sugar, divided
  • 1 1/3 cups whole milk
  • 1/3 cinnamon stick
  • Rind of 1/3 lemon
  • 1/5 tsp pure vanilla extract
  • 1/20 tsp baking soda
  • 1 large egg yolk
  • 2 tbsp white rum or aguardiente

Instructions

  1. In a food processor, grind almonds with 2 teaspoons of sugar until a fine paste forms.
  2. In a saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer for 15 to 20 minutes.
  3. In a bowl, whisk egg yolk, 3 1/3 tablespoons sugar, and ground almonds until thick and pale.
  4. Remove cinnamon and lemon rind from the milk, then slowly add the milk to the yolk mixture, whisking constantly.
  5. Return the mixture to the pan and cook over low heat until thickened, about 5 to 7 minutes.
  6. Let the mixture cool completely, then stir in rum or aguardiente. Serve.
