A rich and velvety Mexican Milk Punch with almond, cinnamon, and a touch of citrus, perfect for any occasion.
Ingredients
- 1 1/3 tbsp blanched almonds
- 3 1/3 tbsp plus 2 tsp granulated sugar, divided
- 1 1/3 cups whole milk
- 1/3 cinnamon stick
- Rind of 1/3 lemon
- 1/5 tsp pure vanilla extract
- 1/20 tsp baking soda
- 1 large egg yolk
- 2 tbsp white rum or aguardiente
Instructions
- In a food processor, grind almonds with 2 teaspoons of sugar until a fine paste forms.
- In a saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer for 15 to 20 minutes.
- In a bowl, whisk egg yolk, 3 1/3 tablespoons sugar, and ground almonds until thick and pale.
- Remove cinnamon and lemon rind from the milk, then slowly add the milk to the yolk mixture, whisking constantly.
- Return the mixture to the pan and cook over low heat until thickened, about 5 to 7 minutes.
- Let the mixture cool completely, then stir in rum or aguardiente. Serve.
