Ingredients

  • 1/2 cup cubed watermelon
  • 2 oz champagne
  • 1/2 tablespoon agave (optional, if watermelon isn't super ripe)

Instructions

  1. Place the cubed watermelon in a high-speed blender and puree until smooth.
  2. Strain the watermelon puree through a fine mesh strainer into a pitcher to separate any pulp or seeds from the juice. Use the back of a spoon to push it through if needed.
  3. Stir in agave into the pitcher of watermelon juice.
  4. Pour the champagne into a champagne flute.
  5. Top the champagne with the watermelon juice, adjusting the ratio to your preference.
  6. Garnish with a sprig of mint and a watermelon wedge. Enjoy!
